Shopska salad


If the cheese is too salty, before consumption put it in cold water and store it in the fridge for several hours. Once opened, it should be conserved in salty brine in the fridge (2-3 table spoons of salt dissolved in 1 liter of cold water).

Ingredients:

2 servings

2 tomatoes

2 mid-sized cucumbers

1 pepper

finely chopped parsley

fresh green onion

4 tbsp vegetable oil

vinegar or lemon juice

60 g ALBENA® cheese

Method:

Slice the pepper, the tomatoes and the cucumbers and combine with the finely chopped fresh green onion and the parsley.  Add vegetable oil, vinegar (or lemon juice) and salt, and carefully mix. Serve on separate plates, topping each plate with crumbled ALBENA® cheese (use a fork to crumble the cheese).

Olives and lettuce leaves could also be added to the salad. The cheese could also be diced if preferred.
